You would think that more throttle gives more speed right? Technically yes but it comes with perfect control. In this video Track Titan gives a great explanation on how to modulate and control the throttle. In sim racing and general motorsport, these techniques are widely used and proven to be beneficial. Like most things, it may take time to adjust and adapt to a different driving style but with persistence and practice, I am sure you will succeed.
